Coalo Valley Farm Thinks Crickets Are the Future of Food

There are only a half dozen cricket farms in the country and L.A. is fortunate enough to be home to one of the newest and most innovative: Coalo Farms. The San Fernando Valley facility raises edible crickets, which have been part of cuisine around the world. Founder Elliot Mermel says that crickets aren't just an outlying oddity on culinary spectrum; the insects are high in protein and could be the answer to global food crises as the world's population continues to rise.
